Dairy free tarragon chicken
When made with fresh tarragon then dairy free tarragon chicken will have a lovely flavour.
It’s easy to make and ideal for a:
- Delicious, ‘quick & easy’ mid week meal
- Lactose free and Gluten free.
French Tarragon is great for making this classic dish. The recipe below shows how to make a dairy free tarragon chicken – usually it is made using double cream, but I made it using Oatly whippable cream which is dairy free, can be used like double cream and great if you are lactose intolerant.
How to make Dairy Free Tarragon Chicken
Ingredients:
- 4 chicken breasts,
- 1 onion – cut into small pieces,
- 4 garlic cloves or 2 cloves if using hard garlic – more details below,
- 120 ml white wine,
- 200 ml double cream (or Oatly whippable cream),
- 120 ml chicken stock,
- 2 tbsp chopped French Tarragon – more details below
- Salt & pepper to taste,
Equipment
- Large frying pan,
- Chef’s knife
Instructions
- Sprinkle the chicken breast with a little salt and pepper on both sides.
- Add a little oil into a frying pan and fry the chicken on both sides until they are brown, about 5 to 10 minutes. (If the chicken breast are quite thick an easy option is to cut them horizontally so they are a bit thinner, makes frying a lot easier)
- Take out of the pan and put on a plate.
- Add the onion and garlic into the pan and fry until they are soft (about 3 minutes).
- Add the white wine and simmer for about 3 minutes,
- Then add the chicken stock, chopped tarragon and double cream. Also carefully add the chicken breasts.
- Simmer for about 5 to 10 minutes until the sauce has thickened.
- Remove the chicken breasts and pour over the sauce
What to serve with Dairy Free Tarragon Chicken
Goes great with roast potatoes, sauteed potatoes or chips. As well with vegetables like green beans.
Softneck or Hardneck Garlic?
If you buy garlic in a supermarket then this is likely to be softneck garlic. This type is a good all-purpose garlic that will work in almost any dish.
On the other hand most restaurants tend to use hardneck garlic because they tend to be very flavoursome, sometimes even spicy & hot. When used in cooking you will have to use less than softneck garlic.
I tend to use softneck, only because that available in most shops. On the other hand hardneck is more tasty, and great if you have space to grow it in your garden. (more details on different garlic types)
French Tarragon
Fresh Tarragon has much more taste then dried tarragon and is easy to grow at home.
The picture on the right shows French Tarragon growing on a bedroom window sill in a pot, and will grow quite quickly. It’s quite small in the picture simply because I tend to cut it back often for use in recipes.
There are 3 different types of tarragon – French, Mexican and Russian.
If you buy fresh tarragon in a shop it will probably be French (but not always).
That is why it’s much better to grow your own. However when growing do make sure you use French Tarragon as that will provide the best flavour.
