Rosemary Honey Recipe
Rosemary Honey is my favourite topping on toast, but is also great to use when basting roast chicken breasts.
Especially when you combine it with lemon juice it’s great for many roast meats. Or you can even stir it into some tea as a ‘pick me up’ drink.
Buy Rosemary Honey or make your own?
Authentic rosemary honey is usually produced in Italy & Spain by bees who feed on rosemary plants, mostly growing on the side of hills. It’s been used since Roman times, if you want to buy some then it is available on Amazon (but not cheap)
On the other hand it is very easy to make at home and great if your Rosemary plants are getting to big.

And the nice thing is that (in addition to the lovely flavour) it’s also very good for you.
The list of potential health benefits is very long, for example:
- Helps digestion (good for your stomach, liver and intestines)
- Great tonic – helps strength and energy
- Good anti-inflammatory
- Moisturizes your skin

How to make Rosemary Honey
It is very quick and easy to do
The recipe below will show you step by step how to make your own rosemary honey.
Ingredients
To make your own Rosemary honey you will need
- 240 ml Clear honey
- 4 or 5 Rosemary sprigs (about 8 to 10 cm long)
Equipment
You won’t need much equipment – most of it is usually available in most kitchen at any stage.
- 1 Small Saucepan
- 1 Measuring jug
Instructions
- Remove the Rosemary twigs from the plant and wash
- Add the honey into a small saucepan
- Add the Rosemary sprigs
- Warm the saucepan but do not boil
- Keep warmed for 5 Minutes
- Leave in saucepan and let cool for 15 to 45 minutes
- Remove the rosemary sprigs
Please note that the longer you leave the rosemary in the honey, the stronger the rosemary flavour will be. Very much up to personal taste.
How to store rosemary honey
The nice element about honey is that it lasts a long time – and you don’t even need to keep it in a fridge.
However, the best option is to use a resealable jar as you will need to keep a lid on the honey.
