Chop the baby potatoes into similar sized bits. And then boil them in salted water in a saucepan for 5 minutes. Remove the potatoes and put aside.
Peel & chop the French tarragon. Chop the onion into small bits.
Prepare the potatoes & bacon
Fry the bacon lardons in a frying pan. When crispy remove but leave any liquid behind.
Then add the chopped onion and fry. Remove the onion, adding them to the saved bacon.
Wipe the frying pan clean with a bit of kitchen roll and then add the butter and potatoes. Fry the potatoes until nice golden and crispy. (about 10 minutes)
Then add the onion and bacon back into the saucepan, mix and heat through.
Finalise the French tarragon bacon baby potatoes
Finally add the chopped French tarragon and mix well.
Remove from frying pan and enjoy.
